Mead is, simply, honey fermented into wine without the addition of grapes, spices or berries. Our Merry Mead is a honey rich elixir, full bodied in flavour with fragrant notes derived from the complexity of the honey’s personality. Lovely for sipping and sharing over charcuterie, smoky cheeses, fruits, nuts and seasonal deserts. This is our best-selling wine. Serve chilled.
This metheglin is fermented using fresh apples right from our farm and Judy’s own cinnamon, heavy spice palate recipe. Like cider, it’s not overly sweet but is lightly bubbly and refreshing. The spices add delayed warmth and, though best served chilled, it can also be gently warmed with a cinnamon stick, especially after a long winter walk.
Black beauty is a melomel, which is honey fermented with fruit. This popular wine is bold, fruit forward, and, harmoniously, balanced. Enjoy with all the fixings of turkey dinner or as a sipping delight. This deep purple, herbaceous and tart berry, blended with just the right amount of honey, makes for a Holiday sensation when sparkled up with a jolt of tonic and freshly sliced orange. Serve chilled or use it in your favourite mulling recipe instead of red wine.
Pearadize is also a metheglin– a blend of honey, spices and fruit. This wine shares a similar spice pallet to the Country Casual, but is more fruit and honey forward, yet firmly in dessert wine territory. We harvest our own pears, as well as add in those of local friends, to make as much as we can of this delicious, fragrant, sweet after-supper pleaser. Serve chilled and enjoy with pie, cake ice cream or as a stand-alone after dinner sipper.
